Vanilla and Cinnamon French Toast

Weekend breakfast at my house is most often a product of what I have leftover in the fridge. This can make for a lot of hashes and scrambles, however this past weekend I got inspired to break out of that rut. I wanted something sweet instead of the usual savory fare, so I decided on french toast. Not just any french toast, but vanilla/cinnamon french toast. It has a slightly sweet taste due to the addition of the vanilla to egg batter that is balanced by the lightly spicy flavors from cinnamon and a dash of nutmeg. It’s a quick and easy breakfast to prepare and perfect for a rainy weekend morning.

Vanilla and cinnamon french toast (makes 4-6 pieces)

6 pieces of your favorite bread (I used whole wheat)
5 eggs
1/4 cup milk
1 1/2 tsp. vanilla extract
1 tsp cinnamon
1/2 tsp nutmeg

1. Scramble the eggs in a small bowl
2. Add milk, vanilla, cinnamon and nutmeg. Stir well
3.  Heat a non-stick skillet over medium-high heat. Coat with cooking spray
4. Dip both sides of the bread into the egg mixture
5. Place bread on skillet for about 30-45 seconds on each side, checking each side frequently
